Pico de gallo fish tacos

Woolworths 500g light crumbed hake goujons
Woolies 290g Crunchy summer salad, roughly chopped and dressed with salad dressing (in a pack)
X4 woolies Corn Taco Shells
For the pico de gallo
Half red onion, finely sliced and soaked in hot water
1 small tomato, finely chopped
1 jalapeno, finely chopped
handful fresh coriander, chopped
zest and juice of 1 lime
Fry off the fish goujons. Mix together all the ingredients for the Pico de Gallo. Start filling the taco shells with the chopped up crunchy salad. Add in the fish goujons. Add a dollop of sour cream and guacamole. Top off with a generous serving of Pico de gallo.
