Oat chocolate cookies
65g rolled oats
100g Woolworths Oat flour flour
20g cocoa powder
½ tsp salt
40g coconut sugar
50g coconut oil or butter, melted
1 small free-range egg
1 tbsp maple syrup
2 tsp vanilla extract
40g Woolworths dark chocolate chips
Heat the oven to 180°C. Line a baking sheet with non-stick baking paper. Combine the oats, flour, salt and sugar in a bowl.
In a separate bowl or jug, whisk together the coconut oil or butter, egg, maple syrup and vanilla. Pour the wet ingredients into the dry, along with the chocolate chips, then mix together to make a dough.
Spoon rounds onto the lined baking sheet, then squish them down a bit with the back of your spoon. Cook for 10-12 minutes.
Leave to cool on the sheet for a couple of minutes, then transfer to a wire rack to cool completely
