Middle Eastern Inspired Christmas Stuffed Chicken

1 Easy to Cook Savoury Rub Chicken
250 g Woolies Lamb Sausage casing removed
1 bunch Spring Onion
1 Garlic Clove, minced
2 Tbs Fresh Parsley
1/2 Cup pitted Woolworths Kalamata Olives
2 Tbs Nuts Pecan Nuts Chopped
1/2 cup Woolies Seedless Raisins
1 Tbs Zataar
1 Tsp Cumin
Salt & Pepper
Preheat oven at 180 degrees Celsius
Sauté the spring onion white part only along with garlic and sausage meat about 10 minutes.
Cook slightly and mix the rest of the stuffing ingredients.
Take a handful of the stuffing push underneath the chicken skin. Stuff the rest of the filling inside the chicken's cavity.
Place a rack over a roasting tin place the chicken breast side up, wings tucked behind and legs tied together.
Roast at 180 degrees Celsius until the inside temperature reads 165. About 1 hour 45 minutes.
Keep basting in its own juices while roasting
Once cooked make the gravy from the drippings.
Serve with roast veggies
