Woolworths Immune boosting Buddha bowl

Served with: Woolies vitamin C shots and other cold press juices
 
INGREDIENTS
1 cup cooked quinoa
3 tbsp lemon juice (split in 2)
4 big broccoli florets (steamed and cut into quarters) (immune system booster)
½ cup baby spinach (immune system booster)
1 chicken breast
1 tsp honey
3 lemon slices (immune system booster)
2 tbsp almonds (toasted and roughly chopped) (immune system booster)
1 tbsp dried cranberries
salt and pepper to taste
olive oil
 
Dressing
1 tbsp grated ginger (immune system booster)
¼ cup lemon juice (immune system booster)
3 tbsp olive oil
1 tsp honey
salt and pepper to taste
 
METHOD
Add the first half of lemon juice to the cooked quinoa and season with salt and pepper. Set aside.
In a small bowl, mix the honey and second half of the lemon juice. In a small baking dish, lay the lemon slices at the bottom, followed by the hicken breast, then the honey lemon marinade. Season and bake in the oven at 180C for 30min. Juices from the chicken should run clear. Set the chicken in the fridge to cool. Once fully cooled, cut into slices.
 
To assemble:
Spoon the cooked quinoa into a bowl, followed by the chicken, broccoli and spinach. Top with the chopped almonds and cranberries. Drizzle the dressing over the entire bowl and Enjoy.
