Festive Meringue Sandwiches

Basic Meringue, 2 quantities
Monin Elderflower Syrup, 1 cup
350 g Crème Fraiche
1 Tablespoon Vanilla Paste
Line a baking tray with greaseproof paper and spoon the meringue mixture into a piping bag with a star nozzle. Pipe onto lined baking tray. Bake at 120 degrees Celsius for 45 minutes or until set on the outside and soft and gooey on the inside. To make the filling, mix the crème fraiche and vanilla paste. Spoon or pipe between 2 meringues and sandwich them together. Heat the elderflower syrup in a saucepan over a medium heat and reduce by half. Once cooled, drizzle over meringues and serve!
Basic Meringue Recipe
4 Free-Range Egg Whites
Salt, a pinch
200 g Caster Sugar
Preheat oven to 120 degrees Celsius
Using an electric mixer with the whisk attachment, beat the egg whites and salt until foamy.
Gradually add the caster sugar and beat until the mixture is glossy and stiff peaks form.
