Woolworths Festive Berry Mince Pies

300g Cake Flour
150g Woolworths Butter, cubed and cold
100g Icing Sugar
1 Yolk
½ tsp Salt
350g Woolworths Blackberries
400g Woolworths Flavourburst Blueberries
200g Woolworths Fruit Mince
1 tbsp Lemon juice
½ cup Sugar
1 tsp  Mixed Spice
½ tsp Cinnamon and Nutmeg       
1 ½ tbsp Corn Starch
 Woolworths Fresh Berries, Flowers and Festive Gold Shimmer to garnish
 Woolworths Vanilla Dairy Ice Cream to serve
 
·       Start the process by rubbing the butter into the flour to form “breadcrumbs”. Add the icing sugar, salt and egg yolk and work into a dough. Add a splash of water if needed. Wrap in cling film and refrigerate for 30 minutes before use. 
·       While the pastry is cooling, place the Berries, fruit mince, sugar, lemon juice and spices into a saucepan. Bring to a boil, then reduce to simmer until the fruit slowly starts to break down, roughly 10 minutes. Taste for sweetness, and adjust with more sugar if needed.
·       Make a slurry with the corn flour and 2 tbsp of water. Add to the berries and cook out for a further 2 minutes until slightly thickened. Remove from heat and set aside to cool to room temperature. 
·       Preheat your oven to 220 degrees Celsius. Grease a mini muffin tray and set aside for use. 
·       Roll out the pastry into roughly 1cm thickness, and cut out rounds to match the size of the muffin pan. Remember to cut double quantities of pastry for the tops of the pies too.
·       Press gently into the muffin pan, add the berry filling ( avoid overfilling, leave a small section of pastry to allow crimping ). Add the pastry lid and crimp gently to form a mini pie. Brush with egg, then bake for roughly 12 minutes until golden and crispy. Allow to cool in the pan before removing. Dust with sugar and gold shimmer for the festive feel.
