Dark chocolate chia pudding

½ cup cocoa powder
1tsp vanilla essence
3 over ripe bananas
2 cups coconut milk
½ cup melted De Villiers Intense Cocoa Dark Chocolate
pinch of salt
7tbsp chia seeds
1 can coconut cream
Mix the cocoa powder, salt, vanilla essence and melted chocolate into a bowl to form a thick paste. Mash the over ripe bananas to a smooth puree and add into the chocolate paste. Loosen the mixture with the first cup of milk and stir thoroughly. Add the second cup of mix and mix to get add the consistency of chocolate milk. Add the chia seeds into the milk mixture and stir. Leave the mixture to bloom overnight. Also place the can of coconut cream, a stainless steel bowl and whisk attachments into the fridge to chill overnight. This assists with the whipping process.
Once chilled, scoop out the coconut cream solid and place in the chilled stainless steel bowl. The liquid can be kept for other uses eg, smoothies, soup, etc.
Whip up the cream to stiff peaks. Add the chia pudding into individual glasses and top with the whipped cream. Garnish with chia seeds, fresh banana and chocolate shavings.
