Winter Indian Curry

Serves: 2 as a main, 4 as a starter.
Preparation time: 20 minutes
Cooking time: 45 minutes

Winter Indian Curry

30ml Canola oil
30ml Butter
800g (avg) Free range skinless chicken breast, cubed
250ml of pouring cream
400g Woolworths Fresh Tikka Curry Cook-in Sauce
Fresh Coriander
Woolworths Fresh Butter Rotis

Heat the olive oil and butter in a saucepan over medium heat.
Add the chicken. Fry for 3 to 4 minutes. –
Cut open cook-in sauce bag, and add to saucepan
Simmer gently for 10 minutes
Add 250ml of fresh cream at the end of the cooking time.
Wrap the rotis in tin foil and warm in the oven at 150 deg for 10 mins
Serve the curry with warmed rotis, fragrant Pilau rice and fresh coriander

 
Fragrant Pilau rice
2 Cups Basmati rice
3Tbs Butter
2t Mustard seeds
Stick of cinnamon
Seeds of 3 Green cardamom pods
4 Cups boiling water
¾ t salt
 
Wash basmati rice in cold water repeatedly until the water is clear
Soak the basmati rice in cold water for an hour
Melt the butter  in a non-stick pan over med heat
Add the spices and fry for a minute or two (until the mustard seeds start sizzling)
Turn the heat down to low
Drain the rice and add to the pan and stir to coat the rice in butter
Add the boiling water, give the pan a bit of a shake, then place the lid on the pan
Cook on low for about 15 minutes – do not stir!

 
Fried onions
2 Medium sized onions, finely sliced
2 T Butter

Melt the butter in a non-stick pan over med heat
Add the onions and fry, stirring often, until the onions are evenly brown, and sweet


Toasted Almond flakes
100g  Flaked almonds

Spread almonds out on a tray under the grill
Watch closely! Remove when they start to brown

Assembly
Dish the rice onto a warm platter
Top with the fried onions and flaked almonds


Mango Lassi
240 g Mango Puree (2 x Woolworths Fresh Baby Food Mango – in Prepared Meals Fridge)
240 g WW Double cream plain yoghurt
Milk (approx. 250ml)
½ t Salt (optional)
Pinch Toasted, ground green cardamom seeds (optional)

Blend the mango puree and yoghurt
Add enough milk to thin to required thickness
Add ground cardamom and salt to taste
