
Winter Apple Bread

INGREDIENTS
3 cups flour
2 cups sugar
2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
4 large eggs, room temperature
1 cup Excella oil
1/2 tsp vanilla extract
2 cups chopped peeled apples (about 2 medium apples)
1 cup coarsely chopped walnuts or pecan nuts
METHOD
Preheat oven to 180°C
Lightly grease two medium loaf pans. You do this by brushing the pan with Excella oil then dusting it with flour. Empty out any access flour.
In one bowl, whisk together all the dry ingredients. In another bowl, whisk together eggs, oil and vanilla then add to the flour mixture, lightly folding until just moistened (batter will be thick). Fold in the apples and walnuts.
Fill the prepared pans for baking ensuring they are not completely full. Bake until a toothpick inserted in the centre comes out clean, 50-55 minutes. Cool the bread in the pans for 10 minutes before removing to cool on wire racks.
