Whipped Feta and Grilled Lamb Flatbread

Serves: 3-4

INGREDIENTS

Naan breads
Skewer sticks, soaked
500g Lamb/beef mince
½ red onion, grated
1 tbsp garlic paste
Salt and pepper
1 tbsp dried oreganum
1 tsp dried rosemary
2 discs Clover Feta cheese
½ cup fresh cream
½ cup plain yoghurt
Fresh mint leaves for garnish
Pickled red onion rings for garnish
 
METHOD

In a bowl, combine the mince, onion, garlic, oreganum, rosemary and season with salt and pepper.

Skewer the mince mixture onto the skewer sticks in an oval shape, like a kofta. Grill on a griddle pan until cooked through.

Combined the feta, cream and yoghurt in a blender and blend until smooth. Alternatively use a stick blender. Season as preferred.

Assemble by adding a dollop of the whipped feta on the naan bread, top with lamb skewers, some of the cooking juices and garnish with a crumble of Clover Feta,  fresh mint leaves and picked red onion rings.
