Waldorf Salad

1/2 Cup (125 ml) of Nola Mayonnaise
1 tablespoon water
1 Tsp. (5 ml) white sugar  
1 Tbsp. (15 ml) lemon juice  
1/8 Tsp salt  
2 Medium red apples, cored and diced*
2 Medium green apples, cored and diced*
1 Cup (250 ml) celery, sliced
1/4 Cup raisins (or fresh seedless black grapes, halved)
1/2 Cup (125 ml) pecan nuts or walnuts (optional)

To Serve:
Butter Lettuce Leaves
(Cook’s Note: *As soon as you chop the apples, place them in a mixing bowl, juice a couple of lemons, remove the seeds and pour over the apples. Mix thoroughly. This will minimize the discoloration of the apples)

METHOD
In a medium bowl, combine Nola Mayonnaise, Water, sugar, lemon juice and salt.
Stir in the apples, celery and raisins (or seedless grapes)
Chill, before serving just before serving, sprinkle with walnuts’ a separate medium bowl, place butter lettuce. Place leaves then add salad, this salad can also be served in smaller portions as part of canapés.
This tasty summer salad will go very well with the Nola Chicken skewers.


CHICKEN SKEWERS – To serve with Waldorf Salad.

INGREDIENTS
1 kg boneless chicken thighs, cut into medium pieces
2 tables soy sauce
1/2 cup Nola mayonnaise 
2 tablespoons olive oil
1 chicken spice
Salt and pepper to taste 
2 tablespoons crushed garlic 
1/2 a lemon, juiced
3 robot bell peppers, cut into medium pieces
Skewers


METHOD:
In a large bowl, whisk together honey, soy sauce, Nola mayonnaise, garlic, salt and pepper.
Before adding chicken, reserve a small amount of marinade to brush onto kebabs while grilling.
Place chicken and cut vegetables in a medium bowl and marinate in the refrigerator for at least 2 hours
Preheat oven grill to 220 degrees
Drain marinade from chicken and vegetables, and discard marinade.
Thread chicken and vegetables alternately onto skewers. Line baking tray with foil then lightly oil it and line skewers on it.
Lower temperature to 160 degrees.
Cook for 12 to 15 minutes or until cooked through. Turn and brush with reserved marinade frequently.
This recipe is great enjoyed with friends or family by the pool side with a good bottle of your favourite bubbly or dry white wine.
The Chicken skewers can also be served as a leisurely lunch with a green salad.
