Very Berry Bread pudding waffles

Ingredients

butter or non stick spray to grease the waffle iron
8 eggs
1 ¼cup sugar
2 cups cream
1 ½ cup milk
2 tsp vanilla essence
4 cups mixed berries, washed and trimmed of leaves
1 loaf 
brioche bread or any other whole loaf, cubed or torn into chunks
whipped cream or ice cream for serving (optional)
extra berries to garnish (optional)
icing sugar for garnish
 
Method

Preheat waffle machine
In a large mixing bowl, whisk the eggs with the sugar and vanilla. Add the heavy cream and Clover Fresh milk and whisk until well blended and sugar is dissolved.
Pour half of the custard mixture over the bread and press lightly so the bread absorbs the custard. Let sit for about 5 min before gradually pouring the rest. You might not use all the custard.
Mix in the berries and press lightly again to allow juices to be absorbed. 
Grease a waffle machine with the butter or nonstick spray.
Using a ladle, scoop some of the mixture into the waffle iron and cook until golden brown.
Repeat the process until you have cooked the entire bread pudding mix.
 
Serve hot with fresh berries, and fresh cream or ice cream
