Vegetarian Bruschetta’s

Vegetarian Bruschetta’s


  • 1 Large french loaf, long enough to serve 5 people
  • 12 multicoloured cherry tomatoes or sundried tomatoes
  • 4 tablespoons olive oil
  • 1/2 cup nola mayonaise
  • 1 tablespoon chives
  • 5 medium sized radish, thinly sliced
  • 10 basil leaves
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • ½ cup cream fraiche or sour cream

In a medium bowl mix all the above vegetables
Preheat oven at 180 degrees.
Pop the tray into the oven and bake at 160 degrees for 10 minutes or until golden.
Drizzle olive oil generously on toasted bread.
In a separate bowl mix mayonnaise, lemon, salt and pepper with crème frachaise
Place sliced french loave on a baking pan lined with baking paper.
Spread mayonnaise mixture generously on each toasted slice, then add a scoop of mixed vegetables and garnish with a basil leaf.
Drizzle with olive oil.
