4 tbsp canola oil
2 onions, roughly chopped
4 carrots, peeled and roughly chopped
4 stalks of celery, roughly diced (leaves included)

350g either pumpkin or butternut, roughly diced
2 cups either barley, bulgar wheat, samp

Heat the oil over medium heat. Add the veggies and slowly begin to sweat the veggies until they soften before seasoning and increasing the heat and browning them.
Add the grains and butternut or pumpkin before topping with the water adding the stock cube. Reduce the heat and simmer gently until the grains are cooked, season lightly if needed.
