Cooking with Tomatoes

Umami tomato sauce

 
8g Celery, finely chopped
30g Onion, finely chopped
3g Garlic, Finely Chopped
10g Carrots, Finely Chopped
1-2 Anchovy fillets
200g Italian whole peeled tomato
40g CosÍ Com'è Datterino Rosso tomatoes, halved 
5g Basil
20g Parmigiano Reggiano, grated
15g Olive oil
50g Dried porcini
10g Black olives, pitted, crushed
10g Sherry vinegar
5g Maple Syrup
Salt and Pepper to taste


Heat olive oil in small saucepan, add garlic, onion and celery and cook till soft.
Add the whole peeled tomato and Cosi Comme and let simmer on low heat for 10 minutes.
Add anchovies and melt them through add the Parmagiano Reggiano rind and leave to simmer. 
Add mushrooms and crushed black olives and cook for a further minute.
Stir in the basil leaves and cook for 3 minutes.
Turn off the heat, stir in maple syrup, sherry vinegar and season to taste.
