Ultimate toasted cheese sandwich

4 ciabatta rolls, cut through the middle
4T caramelised onion
200g Tussers, cut into thick slices
Spiced chilli pickle 250g, roughly chopped and mixed in with the chilli oil
200g Gouda, cut into thick slices
4T sweet chilli sauce
Butter for toasting
For the coriander dressing
30g coriander, leaves and stems
4T mint leaves,
1 lime, zested and juiced
1 green chilli
4T toasted cashews or peanuts
Salt and freshly ground black pepper to taste
A little bit of water, about 1/4 cup
Coat the base of the 4 buns with some of the caramelised onion, some of the cheese and the chilli peppers. Add some gouda, sweet chilli sauce and top with the top of the buns.
Prepare the pesto by combining all the ingredients in a blender except the water. Slowly drizzle in the water with the machine running to form the green aromatic dressing.
Add some butter to a heavy based pan placed over a medium heat before adding the sandwiches, covering them with foil then press down gently using either another pan or using a spatula. Once perfectly golden and toasted add more butter to the pan and turn over to toast the other side in the same way.
Once golden brown on both sides serve the sandwiches with the coriander dressing.
