Turkish flatbread with deep fried cauliflower

Turkish flatbread with deep fried cauliflower

2 cups flour
Pinch of salt
½ cup plain yogurt/ Greek yogurt
½ cup water
2-4 Tbsp olive oil
1 red onion, chopped
2 clove garlic, minced
1Tbsp tomato paste
2tsp ground coriander
1tsp smoked paprika
3-4 cup spinach, shredded
Fresh mint
Fresh coriander
1 lemon
½ cup olives
½ cup mozzarella
½ cup feta cheese, crumbled

For the dough
In a large mixing bowl combine the flour and salt. Make a well in the centre of the flour and add the yogurt and water. Mix well with a spoon until combined. If the dough is too dry adjust by adding more water( a tablespoon at a time). On a floured surface knead the dough until smooth and elastic about 3 minutes. Wrap the bowl and set aside.

For the filling
Heat a large pan, add oil and fry off the onions, garlic and tomato paste. Add the coriander, paprika and shredded spinach. Add a bit of water if filling starts to catch at the bottom of the pan. Cook until spinach is tender and season to taste.

Divide the dough into 4 balls and roll out into rectangles. Spread the filling evenly between the 4 rectangles and top with fresh mint, coriander, squeeze of lemon and cheeses. Fold over and seal the edges. Fry in a hot and greased griddle pan about 3-5 minutes on each side. Cut into quarters and serve

Deep-fried cauliflower
Oil for deep frying
500g cauliflower florets
2-3 Tbsp corn flour
1 lime
Salt and pepper

Heat the oil in a medium pot. In a bowl coat the florets thoroughly in the corn flour and season. Fry in the oil until golden brown and crispy, allow to drain on kitchen towel. Season again and serve
