Ingredients
2 ltr boiling water
3 cups maize meal
½ red, green and yellow pepper
1 carrot, diced to small cubes
1 tbsp dried parsley
2 tbsp olive oil
2/3 cup salted butter
seasoning salt to taste
salt to taste
Method
In a medium to large saucepan, on medium to high heat, add boiling water and about ¼ tsp salt. Once bubbling, add the maize meal while stirring. Stir in all of the maize meal until fully incorporated, then cover with lid and let cook for 20 min.
In a large frying pan, add the olive oil, followed by the veggies and saute. Season with the seasoning salt and set aside.
Once pap is cooked, add the sauteed veggies then stir in the butter. Adjust seasoning and serve hot. Serve with ushatini or coleslaw
