
Truffle Spaghetti with Seared Mackerel

500g Al Nero Di Seppia Spaghetti
3T Butter
2T Woolworths Giuliano Tartufi truffle cream
Salt and freshly ground black pepper to taste
2T Extra virgin olive oil
4 Woolworths Lightly Smoked Mackerel fillets
2 Lemon wedges
Woolworths baby pea shoots to garnish
Prepare the pasta as instructed. Add the butter to a pan over a medium heat to melt. Once melted, turn off the heat and add the truffle cream. Add the still warm pasta and toss through with salt and freshly ground black pepper to taste.
For the Mackerel Fillets: Heat the oil over a medium heat. Add the fillets skin-side down in the pan and allow it to cook as the skin turns golden and crisp, this will take about 3 minutes. Turn over and cook for 30 seconds before taking out the pan and squeezing over the lemon juice. Season lightly with salt to taste.
Add the pasta to serving dishes before topping with the mackerel fillets, finally garnishing with the baby pea shoots.
