Toasted cheese sloppy joes

From your Woolies festive hamper:
1 corned beef
400g Woolies Honey and Sriracha cook-in-sauce
1 litre of chicken stock
Water if needed
Woolies crushed wheat sourdough bread
8 sliced Smoked cheddar slices
8 Slices mozzarella cheese slices
Sweet and sour sliced gherkins
4T butter, extra if needed
Place the corned beef in a large ovenproof dish, with sides high enough to hold the liquid. Combine the cook-in-sauce and chicken stock then pour over the beef, covering most of the corned beef (add water if needed).
Cover the dish with a lid or foil before placing in an oven preheated 160C to slowly cook for about 1 and a half hours or until the beef can be pulled apart easily using 2 forks.
Reduce the leftover liquid in a pan over high heat until it forms a glaze before returning the pulled meat to the dish and stirring through to coat well.
