Tiger Brands Moroccan Inspired Chicken and Apricot Bake

Ingredients
 
¾ cup All Gold Tomato Sauce
1 cup Mrs. Balls Original Chutney
1 tbsp Black Cat Peanut Butter
1 tbsp Moroccan spice
1 tsp curry powder
1 tsp turmeric powder
8 pieces chicken of choice, browned / seared before cooking
1 tin KOO Apricot Halves, drained
½ cup almonds, toasted
Coriander to garnish          
Salt and pepper
 
Serve with cous-cous and cucumber yoghurt dip / tomato and cucumber salsa or pomegranate seeds
 
Method
Preheat your oven to 180 degrees Celsius. In a bowl, combine the All Gold Tomato Sauce, Mrs. Balls Chutney and Black Cat Peanut Butter. Mix well, then add the Moroccan spice, curry powder and turmeric. Add a big pinch of salt and pepper Mix well again, and set aside.
Place the chicken in a roasting tray, and pour over the marinade. Ensure chicken is evenly coated, and laying flat.
Add your KOO Apricot Halves to the tray, ensuring they are partially ( but not entirely ) covered by the sauce. Place in the oven to bake for roughly 30 minutes, until chicken has cooked through, and the apricots have started to caramelise.
Remove from oven once cooked, garnish with toasted almonds and fresh coriander. Serve with cous cous and your choice of sides like cucumber yoghurt, or tomato and cucumber salsa!
 
 
Chefs tips
Ensure your oven is not too hot whilst cooking your chicken – if the sauce or apricots begin to caramelise too quickly, reduce the heat ( due to the high sugar content, certain elements may be prone to going darker in colour faster than others )
Feel free to Add a Twist of your own! Fresh chilli, garlic and ginger are great additions to this recipe, and will give you even more depth of flavour. You could also use this marinade on chicken wings for the braai!
