The real cheese burger

2T canola oil
4 Free range beef burgers
BBQ sauce to glaze
4 haloumi cheese burgers
green chilli mayo: finely chopped or blended together
½ cup good quality mayo
6T chopped jalapeno chillies
1 chopped green chilli
½ roasted green pepper
1 lemon, zested and juiced
salt and freshly ground black pepper to taste
4 x Ultimate burger buns, toasted in butter
butter lettuce to garnish
tomatoes, thick sliced to garnish
salt and freshly ground black pepper to taste


Heat a pan with oil over a medium heat before adding the patties to brown for about 3 minutes. Turn over and cook the other side for another 2-3 minutes while basting the cooked side with the BBQ sauce. Turn over the other side and glaze before taking out the pan. Add the halloumi cheese to the pan and cook for about 1 minutes, or until golden before turning over and cooking the other side in the same manner.
Add some of the green chilli mayo to the base of the toasted bun followed by some lettuce and tomato with a lightl seasoning. Add the burger patty, halloumi and another lathering of the green chilli mayo on the cut side of the top bun before topping and serving.
