For 2 burgers
3T canola oil
4 Woolies thin burger patties
Clarkes Kitchen Chipotle chilli sauce to glaze
4 slices Monteray Jack Cheese slices

For the coriander and chilli mayonnaise: combine
¼ cup tangy mayonnaise
4T roughly chopped coriander
1 green chilli chopped
3T jalapeno chutney
2 ultimate hamburger buns, toasted
Pick and mix solo leaf red lettuce to garnish
Sweet and sour sliced gerkins, to top
Woolies Battered Onion Rings, prepared as instructed

Heat a large pan over a medium heat. Add the oil and heat before adding the burger patties and cooking for about 2 minutes a side or until browned evenly. Begin brushing the chilli sauce over the patties, ensuring both sides are well glazed.
Before removing from the pan add the cheese and allow it to melt before stacking 2 burgers on top of each other to form 2, double patties.
Add some of the chilli mayo to the base of the burger bun followed by some of the lettuce leaves. Layer over some gherkin slices followed by the double patty. Add more of the mayo followed by the top bun.
Skewer the burger before adding the onion rings as a delicious garnish.
