Thai Sweetcorn Fritters with Sweet Chilli Dipping Sauce

Thai Sweetcorn Fritters with Sweet Chilli Dipping Sauce

410g Rhodes Quality Whole Kernel Corn
410g Rhodes Quality Mixed Vegetables
2T green or red Thai curry paste
1 cup cake flour
3/4 cup Bisto corn flour
2 free range eggs
2 spring onion stalks, finely chopped
Salt and freshly ground black pepper to taste

For the sweet chilli dipping sauce: combine
1/2 cup sweet chilli sauce
2 limes, zested and juiced
1/4 cup soy sauce

Combine the corn and veggies in a large mixing bowl with the curry sauce from the veggies. Add the curry paste and begin mixing through to combine. Add the flour, cornflour and eggs.
Add the spring onions and mix through to form a batter and set aside for 10 minutes.
Preheat a waffle iron. Add the batter and cook until the outside is golden brown and the inside is cooked through.
Serve the waffle fritters hot and with a side of the sweet dipping sauce.
