Sweet glazed chicken nuggets

400g woolies Southern Fried chicken nibbles

For the glaze
1/2 cup soy sauce
1/4 cup sweet chilli sauce
5cm piece of ginger, finely grated
4 cloves of garlic, finely grated
1 spring onion, thinly sliced

For the sprinkle
Toasted peanuts
1 spring onion, thinly sliced
1 red chilli, thinly sliced
2T roughly chopped coriander
1 carrot, finely julienned for garnish
Cupcake wrappers to serve

Prepare the chicken nuggets in the oven as per the instructions. While the nuggets are in the oven prepare the glaze by heating the soy and sweet chilli sauce together, bringing it to a gentle simmer along with the ginger and garlic. Add the spring onions and simmer for a few minutes or until the mixture becomes jammy and sticky.
Add the nuggets to the pan and toss to coat well.
For the sprinkle, combine the peanuts, spring onion, red chilli and coriander to a blender and pulsate create a sprinkle.
Add the julienned carrots to the bottom of the cupcake wrapper, swirling it to create a nest. Add the glazed chicken nugget and finish with a sprinkling of the spicy peanut mixture. add a bamboo skewer and serve as a picnic or canapé treat.
