Sweet and sticky hot chicken

3T canola oil
8 pieces of chicken, legs, and thighs
Salt and freshly ground black pepper to taste

For the sweet and sticky sauce
1 cup of water
1/2 cup smoked BBQ sauce
1T paprika
2 red chillis, finely sliced
4 cloves of garlic, smashed
2T Worcestershire sauce
1/4 cup white or brown vinegar
500g Frozen whole green peas, carrots and sweetcorn
2T butter
Salt and freshly ground black pepper to taste
1kg Frozen mashed potatoes, prepared as instructed

Heat the oil over medium heat. Add the thighs skin side down along with the legs. Cook until the chicken is browned, forming a dark golden colour on the skin.
Prepare the sauce by combining the ingredients, mixing well before pouring over the chicken. Bring the mixture to a simmer and cook until the liquid reduced, turning the mixture into a glaze which is now sweet and sticky coating the chicken, making it sweet and sticky.
Prepare the veggies by adding them to a microwave dish to steam draining any excess water. Toss the veggies in the butter and season with the salt and black pepper.
Prepare the mashed potatoes as instructed before adding the chicken with some of its glaze and the veggies.
