Ingredients
2 T olive oil
3 spring onions, chopped
2 cloves garlic, crushed
200g beef strips
1 red pepper, cut into thin strips
1 bunch Swiss chard spinach, chopped
Salt 'n Pepper
Jasmine rice to serve
Cashew nuts, toasted and roughly chopped
Mixed seeds for garnishing

Method
1. Heat the olive oil, add in the spring onions, garlic and beef strips. Cook for a minute or 2.
2. Add in the red pepper strips and allow to cook for another minute. Also, add a seasoning of salt and pepper.
3. Add in the chopped swiss chard and allow to wilt. Once the beef strips are tender, check for seasoning.

Serve the stir fry with cooked rice and garnish with toasted cashew nuts and a sprinkle of mixed seeds.
