Super M Party cookie

3 ¼ cup cake flour

1tsp salt
½ tsp bicarbonate of soda
450g Clover Unsalted butter, cubed & at room temperature
1 cup soft brown sugar
¾ cup white sugar
2 eggs, room temperature
1tsp vanilla paste
Smoked Maldon salt

125ml Super M chocolate flavour

250g milk dark chocolate chips
200ml Peanut butter
2 packets M&M’s chocolate coated peanuts
13 Oreo cookies
1 cup Mini marshmallows

To Make:
Preheat the oven to 180C and grease a 20cm spring form cake tin.

In a large mixing bowl whisk together the flour and salt, bicarb. Set aside.
In another mixing bowl cream the butter, soft brown sugar and white sugar until light and pale in colour. Add the one at a time eggs and vanilla until fully incorporated and smooth.
Add the dry ingredients and mix until well combined.
Divide the dough in two. Spread out half the dough into a 20cm spring form cake tin and set aside.
Heat the Super M in the microwave for 2 minutes or over the stove top until it just starts to simmer. Place the chocolate in a bowl  and pour the hot Super M over. Allow to stand for 1 minute then stir until all the chocolate is melted and smooth.
Spread the peanut butter over the layer of cookie dough. Pour over the chocolate and M&M’s. Layer the oreo cookies evenly. Add the sprinkles and finish off with the marshmallows.
Carefully spread over the other half of the cookie dough to completely cover the fillings. Refrigerate for 10 minutes.
Sprinkle with the Maldon salt and bake for 20 -25 minutes. Allow to cool and serve with a cold glass of Super M.
