1/3 cup strawberry jam
¼ cup water,
½ tsp balsamic vinegar, (or lemon juice)
1 cup heavy whipping cream
1 cup Fruits of the Forest Strawberries and Cranberries
¼ cup icing sugar
½ tsp vanilla extract
2 cups sliced strawberries
In a medium bowl, whip the cream with a whisk or a hand mixer until smooth and thickened. Combine Fruits of the Forest, whipped cream, sugar, and vanilla extract and place in the fridge to set.
In a small bowl, combine strawberry jam, water, and balsamic vinegar. Stir with a fork until combined. Dip the ladyfingers in the mixture to coat them. Line the ladyfingers in a single layer, at the bottom of a baking dish.
Spread half of the Fruits of the Forest mixture over the ladyfingers and layer with half of the sliced strawberries.
Repeat with the remaining ladyfingers, Fruits of the Forest mixture, and sliced strawberries.
Cover with cling wrap and chill at least 8 hours or overnight.
