Strawberry Swiss Roll
Strawberry Swiss Roll with Fruits of the Forest Cream
Makes 10-12 bars
Baking time: 12-15 minutes
For the cake
3 eggs, room temperature
60g castor sugar
45g flour, sifted
2 Tbsp milk
1 tbsp butter
For the Fruits of the Forest Cream
200g Fruits of the forest Strawberry and Cranberry
40g castor sugar
A few strawberries, chopped
Preheat oven 180°C. Place baking paper over a baking tray
Whisk eggs and sugar with a hand mixer until the mixture becomes pale and thick.
Add flour and gently fold into the egg mixture.
Heat milk and butter together and stir to combine. Fold into the egg and flour mixture.
Pour into baking dish and bake for 12-15 minutes. Allow to cool
For the Fruits of the Forest cream
Whisk cream and 40g castor sugar until it stiff peaks form Add Fruits of the Forest and combine well.
Spread the cream on the sponge. Place the strawberries along the side and then roll up the cake.
Wrap the cake tightly with baking paper or plastic wrap and chill in the fridge at least 1 hour
Slice and serve.
