large ready to cook gammon

For the glaze:
4 Flavourburst white nectarines, peeled and stone removed
6cm piece of ginger, finely grated
2t paprika
3T brown sugar
2 cups of water
large ready to cook gammon
for the broccoli slaw: combine
350g Woolies tenderstem broccoli, finely shredded or grated
½ cup dried cranberries
1 cup good quality mayonnaise
½ cup yoghurt
Salt and freshly ground black pepper
½ cup toasted, slivered almonds
salt freshly ground black pepper to taste

Remove the fat cap of the gammon before scoring and placing in the oven to begin cooking, browning he fat. Roast in the oven for as long as the instructions guide.

Add the nectarines to a pot along with the ginger, paprika, brown sugar and water before placing over a medium heat and simmering until the fruit is soft. Using a stick blender, blend the mixture to form a puree.
Begin covering the outside of the gammon with the puree, glazing every 15 minutes until the outside of the gammon is golden and well lacquered.
Allow the gammon to cool before slicing and serving with the slaw and any other sides you’d like.
