
Steamed kingklip
with oyster sauce dressed green beans

Chilling time: 15- 20minutes
±450 Kingklip medallions - or any other fresh firm white fish - not hake
¼ cup Soy sauce
6cm piece, thinly sliced ginger
4 cloves Garlic, thinly sliced
1 Red chilli, thinly sliced
250g Green beans, blanched
4T Oyster sauce
3T sesame seeds
150g salted Peanuts, lightly toasted and roughly chopped
Spring onions to garnish
Coriander to garnish
Limes to serve
Place the kingklip in a saucer before placing into a steaming basket. Before stacking and steaming, pour some soy sauce into each saucer. Add some ginger, garlic and some red chilli. Steam for 5-7 minutes or until the fish is cooked.
Over a medium heat. Add the just blanched beans to the pan with the oyster sauce and toss to coat well. After coating add the sesame seeds and combine with the beans.
Serve with the steamed fish as well as spring onions and coriander to garnish, squeeze over some lime juice and finally add a sprinkling of toasted peanuts.
