Spicy Quorn Enchiladas

Spicy Quorn Enchiladas

For the filling
2T olive oil
1 onion, roughly chopped
6 cloves garlic, finely chopped
1T ground coriander
1T ground cumin
2t cayenne pepper
500g Quorn mince
2T tomato paste
Salt and freshly ground black pepper to taste
1 cup water
4T roughly chopped coriander
6-8 flour tortillas
2 cups tomato salsa

1 handful grated mozzzerella
Thinly sliced spring onion to garnish
1/2 cup sour cream
Roughly chopped coriander to garnish

Heat the oil over a medium heat before adding the onion and cook until caramelised and softened. Add the garlic and spices and cook for about 1 minute or until fragrant. Add the Quorn mince and cook as instructed coating well in the spices.
Add the tomato paste and seasoning before stirring through the mince and adding the water, allowing it to simmer for 5 minutes.
Preheat an oven to 180’C. Carefully add some of the filling to a tortilla before rolling up into a sausage and placing in a roasting dish. Continue doing this until all the wraps and fillings are used and tightly packed in the dish.
Pour over the salsa and sprinkle over the cheese before placing in the oven to cook for 20 minutes. Remove from the oven and sprinkle over the spring onion and adding dollops of the sour cream. Finish with coriander and serve immediately.
