Spicy Prawn fried egg rice

3T Canola oil
4 Garlic cloves, finely chopped
7cm Ginger, grated
1 Carrot, finely shredded or chopped
¼ Red cabbage, finely shredded
2 Spring Onions, cut into chunks
7 Shelled prawns
1 Red chilli, finely chopped
1T Any Asian chilli paste
3T Oyster sauce
¼ Soy sauce
3cups Prepared Rice
3 Free-range eggs
4T Coriander, roughly chopped
4T Basil, roughly chopped
Heat the oil over a high heat. Add the garlic, ginger, carrot, red cabbage, spring onion and chilli. Toss while cooking for 1 minute to cook the ingredients.
Add the chilli paste and oyster sauce. Combine with the other ingredients before adding the rice and tossing through.
Shift the rice to one side of the pan and crack in the 3 eggs. Just before the eggs set scramble them in the pan before tossing with the rice.
Sprinkle in the coriander and basil and serve immediately with extra spring onions to garnish.
