Spicy peri peri chicken sliders

Spicy peri peri chicken sliders

2 large chicken breasts
2t cayenne pepper
3 cloves of garlic, finely chopped
1T dried oregano
1 lemon zested and juiced
3T red wine vinegar
1t paprika
Salt and freshly ground black pepper
3T extra virgin olive oil
4 small buns, toasted in butter

For the slaw: combine
1/4 cabbage, thinly sliced
2 stalks spring onion, thinly sliced
3/4 cup cream o naise
2T mint sauce


Cut the chicken breasts in half through the middle as you would when butterflying breasts but to now have 2 equal sized pieces. Cut each breast in half to now have 4 pieces of chicken breast. Repeat this process with the other breast.
Add the chicken to a bowl and add the cayenne pepper, garlic, oregano, lemon juice and zest, red wine vinegar and paprika along with the salt, pepper and olive oil.
Heat a griddle pan over a high heat. Add the chicken and cook for just over a minute a side or until char lines form and the chicken is cooked through the middle.
Assemble the sliders by adding some slaw followed by the chicken breast. Finish with the top of the bun and serve.
