
Spicy fried prawn sub
Ingredients
400g prawn meat
1T celery salt
2t cayenne pepper
Salt and frehsly ground black pepper to taste
2t dreid oregano
1 cup buttermilk
3 cups cake flour
Oil for deep frying
For the slaw: combine
¼ white cabbage, finely shredded
1 carrot, grated
1 spring onion
1 lemon, zested and juiced
3T maple syrup
3T Tabasco chipotle
4 mini loaves, cut down the middle and toasted.
Add the prawns to a mixing bowl along with the celery salt, cayenne pepper, salt and freshly ground black pepper and oregano.
Toss the prawns to coat well before adding the buttermilk. In a separate bowlcombine the flour with some salt and freshly ground black pepper.
Heat the oil for deep frying: Add the prawns to the seasoned flour and coat well before setting aside while the oil is heating.
Add the prawns to the oil being carefull not to overcrowd the pot. Cook for about 2-3 minutes or until the outside is golden and crispy. Place on absorbent kitchen paper.
Add some slaw to the toasted mini loaf then add the prawns. Topping with extra Tabasco if needed.
