Spicy fried chicken wings

1,5kg chicken wings
3 eggs beaten  
To season the flour:
1 cup flour
1 cup breadcrumbs/panko
1 1/2 teaspoon salt
1 teaspoon chilli powder
2 teaspoon black pepper powder
2 teaspoon garlic powder
2 teaspoon onion powder
2 teaspoon smoked paprika
For the hot sauce
½ cup sriracha
½ cup sweet chilli sauce
½ cup honey
¼ cup BBQ sauce
¼ cup butter
For the blue cheese sauce
½ cup mayonnaise
½ cup sour cream
⅓ cup buttermilk
½ teaspoon Worcestershire sauce
2 crushed garlic cloves
½ teaspoon freshly cracked black pepper
150g blue cheese, crumbled



In a deep frying pan, add enough oil to cover the wings. Keep the oil on medium-high heat.
Mix the flour with the breadcrumbs and seasoning and keep aside.
Dip chicken wing in seasoned flour and breadcrumb mix then in the beaten egg and then in seasoned flour and breadcrumb mix again. Repeat with all the wings.
Fry the wings in the hot oil for 9 minutes, flip and fry for 5 minutes on the other side. Adjust the heat as required to get the wings golden brown.
To check if the chicken wing is cooked, prick the chicken with a knife, if the knife goes through the chicken smoothly it means it’s done. If it feels tough and/or blood ooze out, cook for another three minutes.
Place cooked wings on kitchen towel to remove excess oil.

Hot Sauce
In a sauce pan, add all the sauces and butter. Cool on a low heat until the butter melts. Remove from heat and set aside.

Blue Cheese Sauce
Place all the ingredients in a blender - set aside half the blue cheese crumbles.
Blend until the blue cheese crumbles are just broken down. Pour into a bowl and add the other blue cheese that was set aside.
Place in the fridge until ready to serve.

Place the hot wings in a bowl and pour the hot sauce over them. Toss to evenly coat the wings.
Pour blue cheese sauce in a small bowl to serve.
