Spicy fried chicken sandwich

Spicy fried chicken sandwich

Makes 2 sandwiches

For the chicken
2 large chicken breasts, butterflied
Salt and freshly ground black pepper
1T BBQ spice
2t cayenne pepper
1 lemon zested and juiced
3/4 cup Clover Classic, Plain
2 cups flour, seasoned lightly with salt and pepper
Oil for deep frying

3T clover cream’o’naise
2T Clover Classic plain
2T chilli and garlic sauce
3T white vinegar
2t smoked paprika
3 large tangy pickles, finely diced
4 slices of thick cut bread, toasted in a pan with butter
Crisp lettuce to garnish
Thick sliced tomatoes to garnish

Add the chicken to a large mixing bowl along with the salt, pepper, BBQ spice, cayenne pepper, lemon zest and juice before massaging into the chicken before adding the Clover Classic and coating well, giving it a gently rub to ensure the chicken is covered with the seasoning and yoghurt.

Let the chicken rest for 10 minutes before dusting in the seasoned flour. Allow the chicken to rest for 15 minutes before frying. During this time you can prepare the sauce that will be served with the chicken.
Heat oil for frying: Add the chicken and cook for about 6-7 minutes or until the crumb is golden and crisp and the inside is cooked through. Place the cooked chicken on absorbent kitchen paper to drain off any excess oil.
Building the sandwich by adding a generous amount of the sauce to the bottom slice of bread followed by some tomato and lettuce. Add the chicken and top with extra sauce and finally the last slice of bread. Slice in half and serve.
