Spicy Bean Fajitas

INGREDIENTS
1 teaspoon Crushed turmeric
2 tablespoons Tahini paste
1 teaspoon Honey
1 clove, crushed Garlic
2 tablespoons Lemon juice
2 tablespoons Extra virgin olive oil
Salt, to season
6 Woolworths Ancient Grain Wraps
400 g, cut into large cubes Halloumi or tofu
Olive oil
400 g, drained Cannellini beans
400 g drained Black beans
6, sliced lengthwise Baby cucumbers
Green skin avocados: 2
Jalapenos: sliced, to serve


METHOD

  1. For the dressing, mix the turmeric, tahini, honey and garlic until combined. Slowly add the olive oil, add some lemon juice to taste. Season with salt and pepper.
  2. Toast the wraps in a pan on high heat until toasted on each side.
  3. Fry the halloumi pieces in some olive oil until golden and crispy on both sides.
  4. Strain the beans and toss in a little olive oil.
  5. To assemble, spoon some beans on the toasted wrap and add a few halloumi pieces.
  6. Add some cucumber slices on top with some avocado and sliced jalapeno.
