Sparkling wine and Vanilla Bean Glazed Gammon

Serves: 8
Preparation time: 5-10 minutes 
Cooking time: 2 ½ - 3 hours 
Vanilla bean glaze
1 ½ cups Sparkling wine
1 Vanilla bean, split lengthwise
1 cup Apple jelly
1 (approx.. 3kg) De-boned cured ham
To serve
16-24 florets Tenderstem broccoli, sautéed or blanched
Preheat the oven to 160 °C.

To make the glaze, heat the sparkling wine, vanilla bean and apple jelly for approximately 5 minutes until it has slightly thickened. Place the ham in a roasting pan. With a sharp knife, remove the skin and enough fat from the ham so that only 1/2 cm of fat remains. Score the fat with a sharp knife in a crisscross diamond pattern. Brush the ham with the glaze and place it in the oven. Bake the ham for 2 – 2 1/2 hours, basting it every 15 minutes with the glaze until golden brown. Remove the ham from the oven and let it rest for 30 minutes before carving.
