
Strawberry & Coconut Queen Cakes
Makes 12 | Recipe by Zola Nene
Ingredients:
¾ cup desiccated coconut
1 XL egg
65 ml sunflower oil
125 ml milk
250g Snowflake Queen Cakes Flour Mix
100g strawberries, diced
Preheat oven to 180C.
Grease a 12-hole muffin tin then sprinkle with coconut to coat, tap the tin to remove any excess and reserve for later use.
In a bowl, whisk together the egg, sunflower oil and milk, then stir in the Snowflake Queen Cake Flour Mix until combined – do not over-mix.
Gently fold in the strawberries and remaining coconut, then spoon into the prepared muffin tin.
Bake for 20 minutes or until golden brown and a skewer inserted comes out clean.
