Curried Mince Magwenya Pies

Snowflake Curried Mince Magwenya Pies

For the dough:
500g Snowflake Magwenya flour mix
5g active dry yeast
375ml tepid water
For the mince:
2 Tbs oil
1 onion, chopped
1 Tbs garlic and ginger paste
2 Tbs mild curry powder
1 Tbs garam masala
500g mince
4 tomatoes, grated
2 Tbs sugar
4 Tbs Worcestershire sauce
Salt and pepper
1 egg, beaten
Oil for frying 


Mix together the Snowflake Magwenya flour and yeast, then add the water and mix well until the mixture forms a dough.
Cover the bowl, then leave to rise for 30 minutes.
While the dough rises, make the mince…Heat oil in a pan then add onion and sauté until softened and beginning to brown.
Add garlic and ginger paste, curry powder and garam masala then sauté for a few seconds.
Add the mince and stir to separate – the mince should become coated in spices and begin to brown around the edges.
Add the chopped tomatoes, sugar, Worcestershire sauce and season to taste, then sauté until the moisture evaporates and the tomatoes breakdown.
Remove from the heat and leave to cool.
Heat oil in a large pot for frying.
Knock the dough back then divide into twelve dough balls.
Roll each ball out into a thin round, then place two tablespoons of filling on one half of each dough circle.
Brush the edges with beaten egg, then fold the dough over to enclose the mince filling. Using a fork, press the edges together to seal well.
Fry the Magwenya pies in hot oil until golden brown on both sides.
Drain on kitchen paper, then sprinkle with salt before serving.
