S’mores Waffle ice cream sandwiches

2 ½ cups cake flour
2 Tbsp baking powder
Pinch of salt
2 eggs, beaten
1 ½ cups Clover Fresh Milk
6 Tbsp butter, melted
1 cup mini marshmallows
1 cup dark chocolate, melted
½ cup digestive biscuits/ tennis biscuits,coarsely crushed
Extremely creamy Madagascan vanilla ice cream
Preheat a square waffle iron. In a large mixing bowl whisk together the flour, sugar, baking powder and salt. In a separate mixing bowl whisk the eggs, Clover Fresh milk, butter and vanilla together and pour into the dry ingredients, mix well until smooth and lump free. Fold in the mini marshmallows and bixcuits before ladling about 1 cup into the waffle iron, cook until the waffles are golden , crisp and cooked through.
Take one square of the cooked waffle and dip in the melted chocolate to coat the bottom, leaving the top plain. Repeat this with all the waffles squares. Allow to set before sandwiching 2 squares together with a generous scoop of vanilla ice cream. Repeat this with all the squares and enjoy.
