Beef Lasagne

Slow braised beef lasagne

For the slow braised beef: 
1.5kg trimmed beef brisket
1 teaspoon salt
1 teaspoon freshly ground black pepper
3 tablespoons olive oil
5 shallots finely sliced
2 cups dry red wine
2 tablespoons chopped fresh rosemary
2 bay leaves
One 28-ounce can diced tomatoes
1 packet of tomato paste
2 tablespoons all-purpose flour

For the béchamel:
50g of flour 
1tblsp butter
750ml milk
250g chedder grated
Salt and pepper
2 boxes dried lasagna sheets

For the brisket:
Preheat the oven to 190’C.Sprinkle the brisket evenly with the salt and pepper.
In a large casserole dish, heat the olive oil over medium-high heat on the stove. 
Add the brisket and cook until browned on each side, about 2 minutes. 
Remove the brisket from the casserole dish and set aside. 
Add the onions, garlic and tomato paste to the casserole dish and cook for 10 to 15 minutes. 
Stir frequently until the onions are tender and caramel colored. Stir in the wine, rosemary, bay leaves and diced tomatoes.
Return the brisket to the casserole dish, cover and bake in the oven for 3 hours or until the meat is very tender.Remove the brisket from the cooking liquid, set aside and keep warm. 
Remove 1/2 cup tomato mixture to a small bowl and whisk in the flour until smooth. Add the flour mixture to the casserole dish. Bring to a boil over medium-high heat and cook, stirring frequently, until thickened, 2 to 3 minutes. Shred the brisket and stir into the tomato sauce.

For the béchamel:
Melt the butter in a pot and then add flour while stirring constantly. 
Allow mixture to brown slightly before gradually adding milk while whisking consistently to get lumps out.
Add half of your cheddar to the pot, season with salt and pepper and allow to thicken.Preheat oven to 180’C.
To assemble the lasagna lay lasagna sheets evenly along the base of a casserole dish. 
Top this with pulled brisket and then béchamel before repeating the layers. 
Once you get to the top layer leave out the brisket and to final layer of lasagna with béchamel and the remaining cheese before baking for 25min.
