Festive holiday Watermelon punch
Watermelon chunks of half a watermelon
4 heaped tablespoons Selati brown sugar
Juice and zest of 1 orange
Half a cup of water
500ml lemonade or Sprite
In a bowl, mash up the watermelon and sprinkle over 1 tablespoon Selati brown sugar. Mix well and set aside.
In a saucepan, combine the remaining sugar with the juice and zest of an orange as well as the half cup of water. Heat until the sugar dissolves. Remove from heat and allow to cool.
To serve: place ice cubes into serving glasses. Add 3 generous tablespoons of the mashed watermelon mixture. Add about 1 tablespoon of the orange syrup. Top up the glasses with sparkling water and garnish with lemon slices.
4 eggs, yolks separated from egg whites
1/3 cup Selati white granulated sugar, plus 1 T
2 cups milk
1 cup fresh cream tsp vanilla essence
1 tsp freshly grated nutmeg
In a bowl, beat the egg yolks until they are light in colour. Gradually add in the sugar whilst beating until the sugar is dissolved and the mixture is thick and pale.
Add the milk and cream to a saucepan and heat up, be careful not to boil, remove from heat. Temper the egg mixture with some of the hot milk mixture, whisk well and then return the egg mixture to the rest of the milk mixture in the saucepan. Whisk the mixture over a low heat until well combined.
Remove from the heat and stir in the vanilla extract and nutmeg. Refrigerate. Whilst the egg and milk mixture cools, whisk the egg whites with 1 tbsp Selati white sugar, until stiff peaks form. Fold the egg whites into the cooled egg and milk mixture and pour into serving glasses. Chill in fridge until set for a dessert version.
