Sea Harvest Crisp and Chunky Hake Tacos

Ingredients

For the fish tacos:
Sea Harvest Crisp and Chunky Tempura Battered Hake 2 fillets
2 Flour tortillas
Coriander to garnish
Lime to serve

For the coriander sauce (blend till smooth): 
15g coriander 
1 garlic clove
1 lime, zested and juiced
3T brown vinegar
2T maple syrup
2T extra virgin olive oil

For the smoky sweet slaw:
¼ red cabbage thinly sliced
1 large carrot, grated
50g golden saltanas
¾ cup good quality mayonnaise
2T Chipotle Tabasco
1t smoked paprika 

Method

For the fish:
Place the Sea Harvest Crisp and Chunky Tempura Battered Hake fillets into an oven preheated to 200°C and cook for 20-25 minutes or until golden and crisp.

For the sweet and smokey slaw:
Add the cabbage and carrot to a mixing bowl along with the saltanas, mayonnaise, chipotle Tabasco and smoked paprika combining the slaw with tongs pinching and bruising the cabbage as you combining it to soften the texture slightly. To assemble:Toast the tortillas slightly in a dry pan over a high heat until crisp on the one side. Add the golden, crisp fillet to the tortilla, you can slice diagonally through the fillet to make it fit if you need to. Add the smoky, sweet slaw and top with the coriander sauce. Garnish with extra coriander and serve with a fresh squeeze of lime.
