Scrumptious Orange & Chocolate Torte

Portions: 1 cake (18 cm cake pan)
250 g Lindt Swiss Classic White chocolate
200 g butter
300 g ground almond
500 g oranges (whole)( boiled & blended )
150 g eggs
60 g yolks
150 g sugar
Firstly in a large pot add your whole oranges & water – & boil on medium heat until soft +- 30 min.
Drain the excess water & blend the entire oranges to a smooth pulp – set aside to cool. Cream the butter & then add the melted & cooled white chocolate.
Then add the cooled blended orange pulp.
Sabayon - Whisk the eggs /yolks & sugar until light in color & double in volume.
Fold this through the orange base.
Pour into a greased cake pan & bake for 40 min on 160 c until firm to the touch.
(The cake will remain moist until entirely cooled)
Allow to cool & then glaze with your choice of chocolate ganache.
Decorate with candied orange peel & chocolate shavings.
Lindt Swiss Classic Dark Chocolate Ganache
300 g Lindt Swiss Classic Dark Chocolate
300 g cream (whipping)
Bring to the boil the cream, then add the chopped chocolate
Stirring to form a smooth shinny ganache
