Sabayon with berries

Sabayon with berries

6 large eggs, at room temperature
60 g Selati Castor Snow
100 ml marsala wine at room temperature
2 punnets mixed fresh berries
Mint sprigs, for garnish
 
Pour 2 inches of water into a saucepan and bring to a boil.  
Crack the egg yolks into a large stainless steel bowl. Add the sugar and whisk until pale and slightly thickened then add the wine. Set the bowl over the boiling water and whisk constantly over moderately low heat until the sabayon is thick and has doubled in volume.

Spoon the sabayon into the martini glass and top with the mixed berries. Garnish the sabayon with the mint sprigs and serve.
