Rose & Vanilla Tea-Time Sugar Lumps

for the rose lumps
1/2 cup Selati White sugar
1/2 tsp rosewater
gel paste food coloring (optional)
 
for the vanilla lumps
1/2 cup Selati White sugar
1/2 tsp vanilla extract or seeds of 1/2 a vanilla pod
 
Put the sugar into your processor. Add the flavouring and colouring (if using) and process until well mixed.

Spoon the moist sugar into plastic molds and press down firmly, using the pads of your fingers to make sure you've done a good job of packing it in.

Place something firm and flat over the mold and invert the mold and the surface together, gently lifting the mold so you don't disturb the delicate impressions. Let them sit for up to an hour. They will be firm enough to handle and even stack.

Enjoy with a cup of freshly brewed Rooibos or Ceylon tea and a dash of milk.
