Root Veggie Chips and Spiral Crisps

Root Veggie Chips and Spiral Crisps

2 beetroots peeled
1/2 butternut
2 carrots
2T extra olive oil
Salt and finely ground black pepper


For the sour cream dip
1 cup sour cream
3T roughly chopped chives
2T roughly chopped parsley
1T finely chopped mint
2T green Tabasco

Spiralise the first beetroot and thinly slice the second one into thin disks. Spiralise half the butternut before thinly slicing the other half.
Repeat the process with the carrots. Add the spiral veggies to a mixing bowl and add a little oil before tossing to coat.
Place the veggies in the Smartlife Air Fryer and cook until crisp. Once taking it out the Air Fryer season lightly. Repeat the process with the veggie disks. Serve the crisp veggies with the dip.

For the dip:
Combine the sour cream, chives, parsley, mint and Tabasco before spooning in a serving dish.
